Hainanese Chicken Rice
This Recipe is from my friend, Liaw, he is my very first foodie expert that I have met who I have seen on countless times, he could recreate a dish after tasting it in restaurants. He is always sharing recieps with us. I would know at least three good recipes that he has shared which I have been cooking and using until now. This is my go-to recipe when it comes to Hainanese Chicken Rice, even though Liaw is not Hainanese but he is so happy and proud to share the recipe with us.
Bring water to boil with mushrooms, dates etc
Put in Chicken and turn off fire, soak for 30-40mins in hot water
Take out and put Chicken for 5-10 mins in cold water
Bring soup to boil and turn off fire, put back Chicken and soak for 20-30 mins in hot water.
Depending on the size of the chicken. Ideal one is less than 2kg. Make sure the volume of the water is enough to soak the chicken as we can use the soup to cook the rice. Need to use big pot. Good luck ya😀😀😀🙏🙏🙏
Once cooked. Just mixed the salt n sesame oil n wipe the body of the chicken. Make sure the stomach with more salt🤭and let it cool down. Then use the hot water to cook the rice. The water measurement is 5 cups of rice, water level 5.25 units. 6 cups, 6.25 units etc. But must used the hot water.
