Breakfast Egg Muffins




Doria's Variation :-

Ham
Bacon
Prawns (opional)

5 Eggs
100 ml Milk
1/2 Cup Self Raising Flour (Plain flour 1/4 tsp Baking Powder)
Salt
Pepper
5 pieces of Cheddar Cheese

One piece of Zucchini shredded (medium) - Squeeze out water
1/2 Carrot shredded
1 pack mushroom (optional)

1. Fry bacon and ham and prawns till fragrance until bacon crispy
2. Mix eggs, milk, salt, pepper together, add in flour
3. Add in fried meat and add in cheese

Bake 180 C for 20-25 minutes.

Here is her full recipe.

Her original recipe ingredients :-
  • 6 oz bacon cut into 1/2" pieces
  • 1 small onion 1/2 cup finely chopped
  • 1 large or 2 small russet potatoes peeled
  • 4 oz fresh baby spinach 2 cups, coarsely chopped
  • 6 oz mild cheddar cheese (1 1/2 cup shredded), divided
  • 8 large eggs
  • 1/2 cup half and half or equal parts whipping cream and milk
  • 2 tsp Tabasco sauce


My slightly modified version :-

Ingredients :-
Bacon strips cut into thin strips
1 small onion
4 Oz Spinach or 1 pack needle mushrooms
1 small potatoes peeled and grated (squeeze out water and use kitchen towel to dry it)
6 Oz  or 1 1/2 Cup Cheddar Cheese grated
7 large eggs
1/2 Cup milk & whipping cream
2 tsp Tabasco Sauce or paprika powder
Dark Pepper
Pinch of salt

Method :-

  1. Fry the bacon strips without oil until crispy and oil comes out
  2. Fry ham if any
  3. Fry Onions till fragant, add in grated potatoes, keep turning to avoid sticking to pan.
  4. Beat Eggs, add in milk & whipping cream
  5. Add in vegetable / mushrooms, add in cooled onion and potatoes
  6. Add in half portion of the cheddar cheese
  7. Add in Tabasco Sauce, salt, pepper, or other seasoning
  8. Oiled the muffin tin, scope out the mixture
  9. Put crispy bacon and cheese on top
  10. Bake 190 C for 20-25 mins 
The Result during MCO 18 March to 14 April 2020 :-

First time I used silicon cupcake holders bought by Elliot and they are so good ! I love each muffin has crispy top and bottom. 180 C for 15 minutes at lower middle rank. After baked, I left them in oven to get dry the cheese up a bit to make the crispy top.


 

This is protein superfood with lots of vegetables - Tuna, Carrots, Kale, Parsley, mushroom, cheese, top with crispy bacon and more cheese !  


    2020 RMCO Version

    I read a few more blogs, watched a few videos and here are my lessons-learnt about this Egg Muffins :-

    1) Make them into Breakfast Egg Basket using thin potato slices, this recipe fry the ingredient bit by bit, and the tray goes into the oven 3 times. 
    - harden the potatoes with egg white and butter (5 mins)
    - after veggie and cheese (just to melt the cheese)
    - Crack an egg or pour egg into each cup (10 mins)
     

    2) Secret ingredient to add - Tobasco 




    Egg Base

    • 12 large eggs
    • salt and pepperto taste

    Broccoli, Bacon & Cheddar

    • 364 g broccoli florets
    • 3 slices bacon
    • 113 g grated cheddar cheese
    • 10 g chivesfinely sliced

    Italian Sausage, Kale & Parmesan

    • 226.8 g Italian sausage
    • 1 shallotfinely diced
    • 3 cup (packed) kaleroughly chopped
    • 100 g grated parmesan

    Spinach, Tomato & Goat Cheese

    • 24 grape tomatoeshalved
    • 1 cup (packed) baby spinach
    • 1 scallionthinly sliced
    • 170.1 g goat cheese

    INSTRUCTIONS

    Egg Base - Same For All Flavors

    • Add the 12 eggs to a large 4-cup measuring cup and season with salt and pepper. Whisk the eggs until fluffy.

    Broccoli, Bacon & Cheddar

    • Slice the bacon into 1/2-inch thick pieces. Add to a saute pan over medium heat, stirring frequently and cook until crispy. Use a slotted spoon to remove the bacon to a paper towel.
    • Fill a pot with 1-inch of water and bring it to a boil. Insert a steamer basket, then add the broccoli florets. Cover with a lid and cook for 5-6 minutes. Remove the steamer basket and broccoli, and let cool for a couple of minutes. Then dice the broccoli into small pieces.
    • Fill the muffin tray about 1/2 full with pieces of broccoli, bacon, and cheddar cheese. Sprinkle with chives. Then fill with egg mixture about 90% full and bake at 350F for 20-25 minutes.
    • Let the muffins cool slightly, then run a knife along the outer edge and remove each egg muffin. Enjoy immediately or store in the fridge or freezer.

    Sausage, Kale & Parmesan

    • Add the sausage to a saute pan on medium heat. Use a spatula to break up the sausage and cook it until it's just browned.
    • If there's enough fat in the pan from the sausage, you might not need to add oil. But if the pan looks dry, add 1 tablespoon of olive oil. Add the shallot and kale to the pan and saute for 2 minutes, or until the kale has wilted. Then remove from the heat.
    • Fill the muffin tray about 1/2 full with the sausage kale mixture. Sprinkle some parmesan cheese into each muffin cup. Then fill with egg mixture about 90% full and bake at 350F for 20-25 minutes.
    • Let the muffins cool slightly, then run a knife along the outer edge and remove each egg muffin. Enjoy immediately or store in the fridge or freezer.

    Spinach, Tomato & Goat Cheese

    • Roughly chop the baby spinach. Then, add a small handful of spinach to each muffin cup.
    • Add 4 grape tomatoes halves and a sprinkle of scallions and goat cheese. Then fill with egg mixture about 90% full and bake at 350F for 20-25 minutes.
    • Let the muffins cool slightly, then run a knife along the outer edge and remove each egg muffin. Enjoy immediately or store in the fridge or freezer.

    LISA'S TIPS

    • Nutrition information is based on the broccoli, bacon, cheddar flavor.
    • Each flavor listed in the recipe card has enough ingredients to fill a complete 12-muffin pan. You can always use less of each flavor combination and mix and match as I've done.
    • For the spinach, tomato, and goat cheese muffin, you might need to cook it 1-2 minutes longer, as there is more juice from the tomato.
    • If you are using a regular muffin tin, you can use an oil spray or silicone cups to take the muffins out. Just make sure to not use the paper cups as it will stick.
