Banana Brunch Bread Recipe - Yummy !
The recipe may be mix up in a bowl.
Here is my version and in the order that I measure the ingredients :-
4 Cups sifted all-purpose flour
2 tsp baking powder

250 gm (225 gm to be precise) salted butter, softened
1 1/2 Cup sugar (lessen from 2 Cups)
4 large eggs
1 Cup sour cream (milk with vinegar leave to thicken)

2 Cups mashed bananas
1 tsp salt
1 tsp vanilla
1 tsp Cinnamon powder
4 Cups sifted all-purpose flour
2 tsp baking powder
2 tsp soda bicarbonate
Optional to add :-
1 Cup Chocolate Chips or Coffee Chips
1 Cup Raisins (this is good as it gives a sour taste)
Mix until smooth like a thick cake batter.
180 C 1 hour

Texture : Light fluffy
This Banana Bread Cake Recipe sounds different to me when I first watched the YouTube by Lisa Robertson. The following is her original recipe.
In a large bowl mix:
1/2 Cup / 113 gm salted butter, softened
1 Cup sugar
2 eggs
1 Cup mashed bananas
1/2 tsp vanilla
1/2 Cup sour cream
2 Cup sifted all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 tsp baking soda
Mix until smooth like a thick cake batter. (This is the important clue for this cake.)
For topping mix in a separate bowl: (Optional)
1/2 Cup chopped pecans (optional)
1/2 Cup sugar
1/2 tsp cinnamon
Assemble :-
-In a greased loaf pan put most of the topping mix in the bottom.
-Add mixture of bread batter.
-Add remaining dry topping to top of bread batter
- oven at 350 F / 175 C for 1 hour
- when it comes out it will have a sugary crust on the bottom. It is best sliced warm with butter on each slice. It's good even if it's not warm, by the way!

When Festive Delights did the Charity Bake for Easter 2021, I used this recipe for the Banana Cake and added Cashew nut to it. It rised well. The rectangular cake is the one. The other round cake is the Prune Cake.
