Refika's Kitchen :-

1/2 Kg Minced Beef or sliced beef

1 Large Onion - blended into paste - sieved out onion water 

2 Tbsp Yoghart or Milk Kefir

2 Tbsp Milk

1/2 Tbsp Salt

1/2 Tbsp Red Pepper or Paprika Pepper

Pinch of Black Pepper

Thyme or Oregano (make it lemon taste)

Put on baking sheet and roll into a roll and put in freezer for a day.

Slice thinly from frozen

Melt Butter

Put in donar slices


Turkish German Way 

Cucumber

Tomato 

Green Pepper

Parsley

Lemon Dressing

Grate carrots, slide red onions as semi circle, slice lettuce, red cabbage (add salt & Vinegar), salt

Red Sauce :- Yogurt, Red Pepper Paste, Vinegar, Red Pepper Flakes, Salt, Ginger puree

White Sauce :- Yogurt, Mayo, Garlic Puree, Cucumbers, Dill, salt

Turkish Way

Slice White Onion in semi circles

Mix Persley and Sumac and Olive Oil

Slice Pickles and Tomatoes

Grilled Lamb Kebab


Grilled Lamb Kofta Kebabs

1 pound trimmed shoulder or neck fillet of lamb, chopped into 1-inch chunks
2 heaping tablespoons fresh thyme leaves
1 level tablespoon ground chili pepper
1 level tablespoon ground cumin
4 level tablespoons sumac, if you can find any, or 1 lemon, zest finely grated
Sea salt and freshly ground black pepper
A good handful shelled pistachio nuts
A few handfuls mixed salad leaves, such as romaine, endive and arugula, washed, spun dry and shredded
A few handfuls mixed salad leaves, such as romaine, endive and arugula, washed, spun dry and shredded 
A small bunch fresh mint, leaves picked
1 red onion, peeled and very finely sliced
1 lemon
A bunch of fresh flat-leaf parsley, leaves picked
Extra-virgin olive oil
4 large flatbreads or tortilla wraps
4 heaping tablespoons plain yogurt

Blend Lamb Chunks with the herbs.
Shape and put into skewers.

Meat

500 g Lamb, quality


Produce

2 Red onions

Baking & Spices

2 Cloves

2 tsp Coriander seeds

1 tbsp Paprika, smoked

2 Red peppers


Oils & Vinegars

1 Olive oil

Nuts & Seeds

1/2 tsp Cumin seeds


Other

6 8 long sprigs of woody, fresh rosemary


Jamie Oliver's Tandoori Chicken Kebabs

2 Cloves Garlic
3 inches ginger
40 ml Yoghart
1/2 Paprika
1/2 Tumeri
Garam Massala
60 ml Persada ?
4 Chicken Breast 

Marinate minimum 2 hours 
Grill them





For the meat:

For the flatbread:

  • 25 oz flour
  • 11.8 fl oz warm water
  • 2⅕ tsp sugar
  • 1½ sachets dry yeast
  • 1 egg
  • 1.8 oz butter
  • 0.8 fl oz oil
  • 2⅗ tsp salt
  • 1 egg yolk
  • 1 tbsp milk
  • some white and black sesame seeds

For the filling:

  • yogurt sauce
  • onion
  • iceberg lettuce
  • red cabbage
  • tomatoes
  • cucumber

Here's how:

  1. Mix the seasoning for the meat in a small bowl. Lay out a large piece of food wrap on the worktop and place the veal tenderloins next to and on top of each other so that they form a rectangle. Sprinkle half of the seasoning on the steaks. Next, spread out the ground veal on top of the steaks, then sprinkle it with the rest of the seasoning. Roll up the meat using the food wrap and close up the ends of the wrap. Freeze the meat for an hour. Now remove the food wrap and bake the meat at 375°F in a convection oven for 35 minutes. 
  2. After baking, cut the meat roll in half. Now cut the meat into thin strips using a sharp knife.
  3. Add the flour to a large bowl and make a mold in the center of it. Stir the water, sugar, and dry yeast in a smaller bowl and pour it onto the mold in the flour. Without stirring, leave the ingredients for 10 minutes. Now add the egg, butter, oil, and salt. Use an electric whisk to mix the ingredients into a dough. Leave the dough to sit for one hour in a covered bowl. Next, roll the dough out on a floured worktop and form a round shape. Spread the egg yolk and milk mixture on top of the dough. Press your fingertips into the dough at regular intervals and sprinkle the sesame seeds on top. Bake the flatbread at 375°F for 25 minutes.
  4. Now it's finally time to fill up the flatbread. First, cut it into quarters. Then spread some yogurt sauce inside the bread, filling it with the meat and vegetables.
