A Simple Recipe for Homemade Paneer Cheese that works well as a replacement for Cream Cheese or Ricotta or such. The more cream/fat content, the better, but this can be made regardless and tastes wonderful in all sorts of recipes from your dried foods pantry. 4 cups of Half-n-Half, or reconstituted Powdered milk. 1 Tablespoon of lemon juice or vinegar or lime juice per cup of milk. (but only add the acid 1 teaspoon at a time and stir for 60 seconds before determining if it needs more. Often, 2 or 3 are enough to separate the whey sufficiently. When you notice this, don't add any more acid. It is ready to be strained in the cheese cloth!)
