Orange Pineapple Cake

Orange Cake :

1 1/2 Sticks Unsalted Butter

1/2 tsp Salt

4 Large Egges

2 1/2 tsp Baking Powder

2 1/2 Cups Cake Flout

1 1/2 Cups Sugar

1/2 Cup Milk

Zest of 1 Orange

1 Tbsp Orange extract

3/4 Cup frozen orange juice concentrate, thawed

Organge Colouring Gel (optional)


Pineapple Cream Filling :

2 Cups heavy cream or whipping cream

1 Can Crushed Pineapple

1 small boz instant vanilla pudding


Orange Mascarpone Frosting (whipped)

1 1/4 Cups heavy whipping cream

1 tsp Orange extract

1 Cups Icing Sugar

1 Package Mascarpone, softened

Orange Colouring Gel (optional) 


350 F 8" pound tins. 22-25 mins 

1. Combine Flour, baking powder, salt, zest of 1 orange 

2. Combine Orange juice concentrate, milk, orange extract

3. Whisk butter and sugar until light and fluffy (about 5 minutes)

4. Add eggs one at a time, beat well each time.

5. Add in flour mixture and milk mixture alternately. Begin and end with flour mixture (3 poritions of flour, 2 of milk). If need to, add orange colouring at this point.
