Soya Milk Pulp - Okara


Here are some recipes for what we cn do with the soya milk pulp or known as Okara. Ever since I started to make my own soya milk an tau fu fa, I have been making Okara or I could it Soy Bites and I have asked a few options.

1) Add diced chicken or any meat into mixture, salt, pepper, paprika, other seasoning, add chicken stock, egg, corn flour and shape into nuggets size, pan fry with little oil on both side to get the shape out, then bake 180 C for 20 minutes.

2) Add diced onion, carrots, salt, pepper, cheese slices, seasoning, corn flour.

INGREDIENTS
  

  • 1 lb (~453g) soybean pulp
  • 1 small carrot finely diced
  • 2 stalks green onion finely chopped
  • ¾ cup (94g) all-purpose flour or use gluten-free flour
  • 2 tablespoons cornstarch
  • 1 nori sheet cut into strips
  •  teaspoon salt
  • ¼ teaspoon mushrooms seasoning
  • dash of pepper
  • ½ cup of water plus more if needed
  • cooking oil
  • toasted sesame seeds as garnish

Zesty Okara Hummus

Ingredients

  • 1 ¾ cups Okara
  • ¼ cup lemon juice
  • ¼ cup tahini
  • 2 cloves garlic, roughly chopped
  • 1 teaspoon cumin
  • ¾ teaspoon salt
  • 3-5 tablespoons water or olive oil

Instructions

  1. Place all the ingredients, starting with just 3 tablespoons of water, into your food processor or high speed blender and blend until smooth.
  2. Add more water if the hummus is too thick or until you reach your desired consistency.
  3. Add more spices to taste.
  4. Store in an airtight container in your fridge.

Okara Granola

120 grams okara (soy lees)

2 tablespoons maple syrup

handful of unsalted pumpkin seeds

handful of unsalted pecans

handful of unsalted mixed nuts (walnuts, almonds, cashews)

handful of dried fruits (cranberry, blueberry, raisins)

handful of cacao nibs


Mix together, spread out onto parchment and bake at 170C (325F) for 30 minutes.

Cool and store in airtight container

NOTES: The original recipe instructs you to bake the okara mixed with some maple syrup for 10 minutes on the top rack of your oven, adding the nuts with a little more maple syrup and baking it for another 20 to 25 minutes, but I didn't do that, so I think this is why my granola turned out "moist".

Okara Beetroot Burgers 1 1/2 cup okara (soy bean pulp) 1 cup cooked brown rice 2 medium size carrots, grated (or use slow roasted carrots) 2 small slow roasted beetroots 1 onion, chopped and fried 1 packet of shiitake mushrooms, chopped and fried 1 Tbsp tomato paste or ketchup 1 Tbsp white, brown or red miso paste 2 Tbsp mushroom powder 1-2 Tbsp nut or seed butter (optional) 1 green onion or a handful of chives, chopped 1/2 to 1 tsp salt 1 tsp onion powder 1 tsp cumin powder 1/2 tsp garlic powder 1/2 tsp smoked paprika 4 Tbsp psyllium husk Bake at 190 degrees Celcius for 30 min, flipping after the first 20 minutes.
