Green Peas Recipes

 I am not really a big fan of green peas but my American friends have shared with me how nice this southern dish taste like :- Green Peas Cassrole, where they described it as like an important dish during Christmas Festive Season. So I have tried this few times, I have guests who said its very special during Christmas Eve dinner but I could not really pin point what was the magical factor for the nice dish. Anyway, my dry food pantry has a few cans of these peas and I am going to list down what recipes I could cook them with and hopefully show the results of my cooking.

Peas are part of the legume family, like chickpeas and lentils. But they are more often eaten as a starchy vegetable (like corn or potatoes). They are high in plant-based protein. ½ cup of peas has 4 grams of protein. The calorie count is also fairly low: 62 calories for the same amount. 


1. Green Pea Casserole

    First Recipe :-

    Ingredients

    1 Canned Green Peas

    1 Large Onions diced

    1 Canned / Pack Mushrooms 

    Cheddar Cheese

    Half Half Cream or Milk or chicken stock

    Fried Red Onions or 

    Some plain Flour for frying

    Method

    1. Melt butter and fry onions, garlic, add in flour, cream or water

    2. Put in Cheese and lastly Cheese

    3. Bake 180 C for 20 mins

    4. Pour the fried onions on top and bake for 5 mins

    Variations 

    1. Use Ritz crackers, corn flakes (not frosted), or Panko instead of the fried onions.
    2. Don’t like mushrooms? Leave ’em out!
    3. Prefer the taste of pearl onions? Add those in!
    4. Lover of bacon? Cook some to the crispness of your choosing, chop up, and throw in!
    5. Add in pimentos for a pop of color.
    6. Don’t have time (or don’t want to) make the roux? Just use cream condensed soup.

    Second Recipe :-

    5 Cups (20 Oz) Frozen Peas 

    1 Celery Rib chopped

    1/2 Cup Mayonnaise

    1/3 Cuap Chopped Onion

    1/2 tsp Salt

    1/4 tsp Pepper

    1 Package (6Oz) Stuffing Mix (mix up) 

    Method :-

    Put everything together and bake 170 C for 25-30 mins 

    Some commented as needing sourcream or more flavour for this casserole

    Third Recipe :-

    1/4 cup butter

    1/2 cup chopped onions

    2 cloves garlic, finely chopped

    2 tablespoons flour 

    1/2 teaspoon salt

    1/4 teaspoon pepper

    1 cup milk

    1/2 cup heavy cream

    1 cup shredded Cheddar cheese

    2 cans (15 oz each) peas, drained

    1 can (2.8 oz) french fried onion rings

    Method :-

    1. Fry the onions, garlic and melt cheese into it.

    2. Add in peas and cream

    3. Pour to casserole and bake 180C 20 mins and after that add fried onions on top and bake further 5 mins.

    2. Green Peas Pasta Bake

    This is an Italian recipe that can be cooked within 15 minutes and taste good and cheap in cost. 

    Ingredients :-

    Frozen or Fresh Peas

    Short Cut Pasta

    Cheese (Parmesan or Cheddar)

    Onion

    Olive Oil

    Salt & Pepper

    Method :-

    1. Heat up olive oil, fry onion and garlic, add frozen peas (if canned peas to add at the end), cook with water, then add in pasta to cook for the starch to come out.

    2. Add Cheese. 

    3. I would propose to bake it for 15 mins at 180 C.

    3. Herby Pea and Lemon Pasta Salad

    Ingredients :-

    6 ounces uncooked small shell pasta

    1 ½ cups frozen green peas, thawed

    ¼ cup chopped fresh flat-leaf parsley

    ¼ cup torn fresh mint leaves

    ¼ cup extra-virgin olive oil

    2 tablespoons chopped fresh tarragon

    2 tablespoons fresh lemon juice

    1 tablespoon chopped fresh thyme

    ½ teaspoon kosher salt

    ½ teaspoon freshly ground black pepper

    6 ounces shredded skinless, boneless rotisserie chicken breast (about 1 1/2 cups)

    ¼ cup sliced almonds, toasted

    Method :-

    1. Cook pasta according to package directions, omitting salt and fat. Add peas during the last 2 minutes of cooking. Drain.

    2. Combine parsley and next 7 ingredients (through pepper) in a large bowl, stirring with a whisk. Add chicken; toss to coat. Add pasta mixture; toss. Sprinkle evenly with almonds.
