Ingredients

85 gram (6 Tbsp) butter, softened

100 gram (1/2 cup) sugar (Brown is recommended)

1 large egg, room temperature

25-30 gram (2 Tbsp) canola oil

1 tsp vanilla extract

1/4 tsp butter flavoring - optional 

180 gram (1.5 cups) all-purpose flour

75 gram (1/4 cup) cornstarch

1 tsp baking powder

1/4 tsp salt

3 Tbsp apricot or other fruit preserves


Large Batch Baking (3 Portions) :-

250 gram butter, softened

300 gram sugar

3 large egg, room temperature

75-90 gram Canola oil

3 tsp vanilla extract

3/4 tsp butter flavoring - optional 

540 gram All-purpose flour

225 gram Cornstarch

3 tsp baking powder

3/4 tsp salt

9 Tbsp apricot or other fruit preserves


Method :-

  1. Preheat oven to 180° C (350° F). Cream butter and sugar until light and fluffy; beat in egg, oil, vanilla and butter flavoring. In another bowl, whisk together flour, cornstarch, baking powder and salt; gradually beat into creamed mixture.
  2. Shape dough into 1-in. balls; place 2 in. apart on greased baking sheets. Press a deep indentation in center of each with a finger thumbprint or the end of a wooden spoon handle. 
  3. Tip : Fill with preserves before bake will solidify the jam perserves.
  4. Bake until edges are light brown, 8-10 minutes.
  5. Remove from pans to wire racks to cool. Or fill with preserves now.
