Baked Sausages - this year I bought home-made sausages by Dorine in Penampang, she is so creative and she has so many choices of sausages ! 

@Rm 40 per 500 grams ( 5 gourmet / large sausages ) per pack ( number of pks avail  in stock )

1) Honey Garlic 

2) Pork and Leeks  

3) Cumberland Sausages  

4) English Bangers 

5) Pork and Apple  

6) Italian Mild Hot 

7) Spanish Chorizo  

8) Creole Cajun Sausages  

9) Bacon sausage 

10)Hot Italian 


Method choice of cooking 

Sausages to be completely defrosted or thawed first 

1) Pan Fry: Pan fry in moderate heat with a bit of oil, covered for about 6-7 mins per side till Nice and brown 

2) Oven: Grill on baking sheet for 20 mins ( on preheated oven @200 C ) 

3) Airfry : Bake or Grill @ 200C for 10 mins

4) BBQ: Place completely  thawed sausage on the side of the bbq ( non-direct heat ) turning occasionally for about 20-25 mins ( not overcooked )


The year is 2025 so AI has to come into the picture for planning Christmas Meal, right ?


Mixing minced Chicken + Beef for Bolognese balls — good idea?

Short answer:
👉 Yes, it works, but with one condition.

👍 Why it can work

  • Beef → gives depth, richness, and that classic Bolognese flavour

  • Chicken → lightens the texture, cooks faster, and is usually cheaper for bulk cooking

  • Rolling them into tiny balls helps:

    • even cooking

    • better browning

    • easier portion control for large batches

⚠️ Important tweaks (very important)

Because chicken is leaner and can dry out:

Do this:

  • Use at least 60–70% beef, 30–40% chicken

  • Add extra fat or moisture, e.g.:

    • olive oil

    • a little milk or cream

    • finely grated onion or carrot

  • Season well (chicken is bland)

Best seasoning combo for mixed meat

For every 1 kg meat:

  • 2 tsp salt

  • 2 tsp black pepper

  • 2 tsp dried oregano or Italian seasoning

  • 1 tsp garlic powder (or fresh garlic)

  • Optional: grated parmesan rind or nutmeg (very subtle)

Cooking tip for large batches

  • Brown meatballs in batches (don’t overcrowd)

  • Remove, then build sauce in the same pot

  • Add meatballs back later to finish cooking in the sauce

👉 Verdict: Good idea for Christmas bulk cooking, cost-effective, and crowd-friendly if you keep beef dominant.
