Chicken Kiev


My version of Chicken Kiev

Chicken Breast meat, half a breast cut up and open up as a love shape, then knock the meat down.
Pineapples slices (canned or fresh)
Ham
Cheddar Cheese
Mustard Sauce
Egg
Corn flour / KFC Marinating powder
Bread Crumbs

Marinate the Chicken Breast meat with salt, pepper, onion powder, garlic powder, dash of English Curry (kunyit) powder, mix well.

After I knock out the meat, marinate with spices above.
Spread it out on the board, spread some mustard sauce over it, put the ham, pineapple and cheese in (not too big as it is difficult to roll).
Roll up the meat from all sides, use toothpicks to secure "holes" to prevent cheese from leaking.

Roll the Chicken Kiev in egg, dust with corn flour / KFC marinating powder, roll in the bread crumbs
Fry in pan just to brown both sides, transfer to oven
Bake 180 C for 20 mins

Note :- depending on how secured is the Chicken Kiev, some cheese will flow out during baking.
The texture is crispy on the outside and juicy and flavourful (cheese with pineapple in mustard sauce), hopefully it goes well with the chicken breast which are quite plain.
