Korean JAPCHAE (CHAP CHAE)

Korean Japchae (Chap Chae) - Vegetarian version
My modified Vegetarian style (without beef)
To cook for as family meal
2 packs of Korean Sweet Potato Vermicelli (200 gm pack)
Spinish (boil before Vermicelli)
2 - 3 fried eggs
Green Onion (1 bundle)
1 medium Onion (sliced)
1 medium Carrot (sliced thinly)
1 medium red Pepper (sliced)
1 pack of mushroom
Soya Sauce
Sesame Oil
Brown Sugar
Sesame Seeds (toasted)
Sprinkle with coriander leaves
1. Boil Spinach (optional) and take out and squeeze out water, marinate with a bit of sesame oil and soya sauce.
2. Boil Vermicelli in boiling water for 5- 7 minutes till cooked. Drain with cold water and mix with sesame oil and soya sauce. May make a day before if doing a big batch.
3. Fried egg and slice them thin
4. Fried the rest of items slowly
5. Gather them all in a large boil
6. Add Sesame Oil, Soya Sauce and Brown Sugar to taste
7. Sprinkle Toasted Sesame Seeds, Coriander Leaves

1. First attempt was really good, quite a bliss to make, just need to organise the items and prepare as it goes, the video on Maangchi is good and orderly but too much work to keep frying one at a time.
Will definitely make more of this in future.
