Easy Granola


I have tried making Granola bars and Granola loose bites few times, often the raisins were a bit burnt or the Oat a bit uncooked, it was hard to get a balance. I came across this recipe as I needed to make Granola quickly and I had no other easier recipes at hand. This Recipe makes a lot sense and so easy. Here are some few good tips in making Granola :-

1) 50-50 portion for oil and sweetness, be it Virgin Coconut Oil or Vegetable Oil, honey or raw sugar.
2) Add in raw oats (I usually use 2/3 raw oats, 1/3 instant oats and add a bit so it is not so wet) and raw nuts (do not put in roasted nuts), mix well, bake at low temperature of 150 C for 20 minutes, turning it once half way baking. How to know the oat is done, when it smells like cooked honey or when the oats and nuts are toasted. It will be still wet.
3) Once 20 minutes, take out the tray and add in dried fruits or roasted nuts (including Toasted Black Sesame or Sesame) and mix well, as it cools down, the oats will be dry up.
4) Once completely cooled down, put in containers and can keep up to 1 month.
5) If you wish to make them into Granola Bars, once its baked, press them down into shapes and sizes you want and cut them up into bars or roll them into balls. It should stay in shape when it cools down.

Goes really well with cold milk or yoghart.

INGREDIENTS
1/2 cup canola oil or other neutral oil, such as coconut or olive oil
1/2 cup honey or maple syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1 cup sliced almonds
1 cup raisins or other dried, chopped fruit (add last)

150 C bake for 20 minutes, turn it around half time.

STEPS
1) If possible use baking sheet
2) The Garnola is ready if golden brown and the nuts are toasted. They will still be wet.
3) Add in dried fruits, toasted nuts, toasted sesame and mix well. Let it cool down before put in air tight container up to a month.

Comments :-

If the mixture is a bit too wet, taking a bit longer to brown or toasted in the oven, be careful how long you increase the oven time, remember to turn it a few times while in oven. I think 30 mins is the maximum in the oven, even if the mixture is still a bit wet, you should take it out and immediately while it is wet, you should stir it up and transfer to plastic bowl. I usually would dice up dried mango, raisin and mix them in. If you do not remove them early enough the bottom will stick to the pan and harden.

Ingredients

  • 300 g (10.5oz/3 cups) jumbo oats (if on a strict GF diet, ensure they're labelled gluten free)
  • 100 g (3.5oz/1 cup) brazil nuts roughly chopped (or mix with walnuts)
  • 50 g (2oz/1/2 cup) sunflower seeds
  • 25 g (2 tbsp) sesame seeds (or flax seeds)
  • 50 g (2oz) dessicated coconut
  • pinch salt (fleur de sel)
  • 3 tbsp unsweetened cocoa powder (I use Van Houten)
  • 75 g (3 tbsp) coconut oil, melted (unrefined/cold-pressed) or neutral oil
  • 75 g (5 tbsp) maple syrup

To add after baking:

  • 100 g (3.5oz/3/4 cup) dried plump cranberries (or golden raisins)
  • 125 g (4.5oz) dark chocolate chips, drops, or grated chocolate (Vegan if necessary)

Instructions

  • Preheat the oven to 180°C (160°C fan)/350°F (Gas 4).
  • In a large bowl, mix all the ingredients except the chocolate and dried fruits. Mix well until completely coated in the coconut oil and maple syrup.
  • Cover a baking tray with baking paper (or a silicone mat). Spread out the oat mixture evenly. Bake in the oven for 20 minutes, turn over the mixture and return to the oven for a further 15-20 minutes.
  • As soon as out of the oven, immediately sprinkle over the chocolate chips/drops/grated chocolate and the dried fruits over the hot granola (see note*). After about 5 minutes, turn over the granola to mix in the melted chocolate and dried fruits. Leave to cool for the chocolate to set either on the counter at room temperature or for 15 minutes in the fridge. Transfer to a sealed container when cool.

Notes

Store in an airtight container at room temperature. Enjoy at its best within 10 days.
* Quicker altervative: wait until the granola cools completely then add chocolate chips and fruits (the result is different - no clumps achieved with melted chocolate but still good).
Serve with almond milk, fresh berries or with homemade rhubarb compote for a vegan breakfast or any of your favourite vegan accompaniments.Otherwise, if it doesn't need to be vegan, enjoy with yoghurt, milk or Skyr (we're seeing this appearing from Iceland in French supermarkets)
