Easy Alpine Grain Sandwich Bread




300 gm Easy Alpine Grain
700 gm Bread Flour
10 gm 5500 Actiplus (Improver)
50 gm Water
50 gm Butter
5 gm Salt
10 gm Sugar
12 gm Yeast

  1. Combine all dry ingredients except butter into large mixer, mix 4 mins slow speed and 6 mins fast speed. 
  2. Add in butter and continue until entire dough came together,27 C temperature
  3. 40 min Fermentation
  4. 800 gm each and another 15 mins proofing
  5. Shape the dough into cylinder loaf and another 50 mins final proofing at 32 C 85 % humudity.
  6. Bake 230 C 22 mins
