Tuna Cheesy Tarts

Ingredients:

  • 2 rolls BWY tart shells (small)
  • 185gm C-Chef tuna flakes (drained)
  • ½ cup corn kernels
  • 2 tablespoons parsley (finely chopped)
  • ½ medium red capsicum (finely diced)
  • 30gm Mama Lena cheddar cheese (grated)
  • 3 nos eggs
  • ½ cup Meadow Fresh milk
  • Salt and pepper for flavouring

Method:

1.Arrange tart shells on baking tray, put aside.
2.Whisk eggs and milk together in a bowl.
3.Add in tuna, corn, parsley, capsicum, cheese, salt and pepper.  Mix well.
4.Spoon 1 tablespoon filling into each tart shell.
5.Preheated oven at 170°C and bake for 15 to 20 minutes or until golden and puffed. Rest for 5 minutes before serving.
