Wholemeal Bread


This is an "engineered" wholemeal bread recipe. Very methodical.

To make the roux:

12 Oz High Protein Flour (for 2 loaves)
12 Oz Water (if has egg, reduce water) 
Instand Yeast
Ferment 1 hour, put in fridge for 14 hours, keep for 3 days 


Wholemeal Flour 40%
Sugar
Milk Powder
Salt
t Tbsp Butter 
1 Egg
Put in the roux
