I have made this recipes many times and it is a wonderful simple broth that can be used as a base for any soup : Miso Soup, Tomato Soup, even on its own with salt, it is flavorful !
Ingredients
3 sticks Celery
1 medium Carrot
1 large Onion
1 Garlic - cut through middle
3 pieces Kelp
Dried Mushroom
2 Tbsp Miso
3 Tbsp Oil
2 Tbsp Water
4 - 4.5 liter of water to boil into broth for one hour
150 C Cool Oven for 45 to 60 mins. You may turn the vegetables around in the middle of the baking.
handful of Pepper Corns - add in when boiling
Method
1) Slice the vegetables up thinly (as thin as possible)
2) Mix well with Miso mixture
3) Lay out on tray bake 150 C for 45 - 60 hour. Watch it towards the end to avoid burns as the broth will be slightly bitter if has burnt vegetables.
4) Add 3.7 - 4.3 litres of water and a few Pepper Corns (Secret Ingredient) and boil for one hour. I usually boil with 50% of liquid to soften the vegetable and add the rest of water.
5) Use a base soup for Japanese, simple clear soup
