The difference is to make panade, a mixture of bread (without sides) and milk into chuny paste, this will keep the burger moist even if it is well-cooked.
INGREDIENTS
- 2 pieces white sandwich bread, crusts removed and cut into 1/4-inch pieces
- 1/3 cup milk
- 2-1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 3 garlic cloves, minced
- 1-1/2 tablespoons Worcestershire sauce
- 2 tablespoons ketchup
- 3 pounds 85% lean ground beef
- 3 scallions, very finely sliced (optional)
1. Make the panade of bread and milk
2. Add in the other ingredients : tomato ketchup, Worcestershire Sauce, salt, pepper, minced garlic, scallions (spring onions).
3. Mix well and shape into 8 burgers.
Fry them 3 minutes on each side. I used to brown one side and flip over then half brown the other side and put them into oven 170 C for 15 minutes.
