Pineapples Tarts - our way

Pineapple Tarts are "essential" goodies during Chinese New Year, they are a bit complicated to make, those on sale has variety of qualities and prices. The good tiny ones are like RM1 per piece !   Here is the version I have tried (after few trials) which produces very reasonable tasty pineapple tarts. 

In those years that I dont make them, it was either due to lack of time or health reasons, some years, I would only make 2 Kg of Pineapples as there are just too tempting to keep eating. 


250 gm Butter

70 gm Icing Sugar

2 Egg Yolks lightly beaten

330 gm Plain Flour

2 Tbsp Corn Flour

Note :- 4 Portions will use 2 packs of pineapples (1 Kg each). 280 rolled pineapples

For Pineapple jam, I have decided to go for the store-bought, from Thailand or Philippines, they are all less sweet nowadays. To prepare from beginning is tough and a lot of work. 

170-180 C 12-18 mins - turning half way
