Avocado Lemon Muffins Recipe
Ingredients
2 Eggs (Large)
160 gm Sugar
1/2 tsp Salt
280 gm Melted unsalted butter
140 gm Milk
240 gm Cake flour (+60 gm to replace Almond powder)
60 gm Almond powder (replaced with normal cake flour)
1 3/4 tsp Baking powder
100 gm Avocado
Lemon zest
2 tsp Lemon juice
Bake 175 C - 25 - 30 mins
Ingredients

80g Sugar
1g Salt
70g Melted unsalted butter
70g Milk
120g Cake flour
30g Almond powder (replaced with normal cake flour)
4g Baking powder
50g Avocado
Lemon zest
5g Lemon juice
Directions:
1. Mix the eggs with sugar and salt, then add melted unsalted butter and milk and mix.
2. Sift the soft flour, almond powder, and baking powder and mix, then add the sliced avocado, lemon zest, and lemon juice with a sieve and mix.
3. Fill a muffin tin with a 4.5cm parchment paper in place, put the sliced avocado on top, and bake in an oven preheated to 175 degrees for 25-30 minutes and cool.
