Avocado Lemon Sponge Cake

This is my take on the Avocado Lemon Sponge Cake especially now it is the season for Avocado ! I have so many packs of frozen Avocado and this is one way to share the goodness of Avocado to people in the form of a light cake. 

4 Egg White

2 Oz Sugar

1/4 tsp Cream of tartar


4 Egg Yolks

3 Oz Vegetable oil

50 gm Butter (optional)

3 Oz Water  

1/4 tsp Soda Bicarbonate

4 Oz Sponge Cake Mixture

3-4 Oz Avocado (Puree)

2  tsp Lemon Juice

Lemon Zest  

Note :- Sponge Cake texture 

175 C 40-55 Mins 


Avocado Lemon Muffins Recipe

Ingredients

2 Eggs (Large)

160 gm Sugar

1/2 tsp Salt

280 gm Melted unsalted butter

140 gm Milk

240 gm Cake flour (+60 gm to replace Almond powder)

60 gm Almond powder (replaced with normal cake flour)

1 3/4 tsp Baking powder

100 gm Avocado

Lemon zest

2 tsp Lemon juice

Bake 175 C - 25 - 30 mins
