- 2 eggs, lightly beaten
- 220 g sugar
- ¼ teaspoon salt
- 1 kg yellow tapioca, grated
- 5 pandan leaves, rinse and drain well
- 400 gm undiluted thick coconut milk, 2 coconuts, at room temperature
- 125 ml water
1.3 Kg of Tapioca will yield 1 Kg of flesh. Grate to fine texture, drain it in a strainer. Allow 30 minutes for juice to flow.
It suggests to pour away liquid, only take the starch at the bottom of bowl.
Put strained tapioca into mixing bowl, add in tapioca starch, sugar, beaten eggs and sugar.
Stir till sugar dissolved. Squeeze pandan juice into mixture
Add in coconut milk, water, mix well.

Ingredients:
- 1 kg grated cassava*
- 3 1/2 tbsps tapioca starch
- 1/2 tsp fine salt
- 230 g fine sugar
- 2 eggs (grade A/size L, lightly beaten)
- 400 ml thick coconut milk
Add tapioca starch to grated cassava, mix well. Add in salt and sugar, mix until sugar has dissolved. Add in eggs, mix until well combined. Add in thick coconut milk gradually, mix until well combined.
