Tau Fu Fa - Tau Fu Custard 豆花
I have recovered my Tau Fu Fa recipe ! Finally ! Now I can enjoy my own recipe which is so much better than outside.
300 gm Soya Beans - soaked for 4 to 6 hours. May shorten time of soaking by using hot water.
Boil it for 20 mins or just blend it first with 1750 water
Mix 3/4 Fruit Acid with 1 Tbs of water.
Make sure soya milk is boiling for about 10 minuts. Wait for the temperature to cold down to about 80C, pour in fruit acid mixture, turn clockwise 3 times and then anticlockwise 3 times. It shoud become custard like within 10 - 15 minutes.
I melt molasses with hot water and it very nice to eat.
Making soya milk - the better ratio is
300 gm with 1500 - 1750 of water
More water will be diluted.

For this recipe, if you wish to use GDL, exchange 3g of Gypsum by 3g or ¾ tsp. of GDL, diluted in 2 tbsp. of water.

Pour in Fruit Acid GDL when soya milk is about 80 C. I did the first round right after boiling and it failed. So second time I poured when its about 60 C cos I could not tell how hot is 80 C. 60 C after heating up the spoon and place on hand, its not too hot.

How To Make Caramel Tofu Fah (Without Gypsum Powder)
Ingredients: 1 Litre Soy Milk 5 grams Agar-agar 3 pieces Pandan Leaves 200 ml Water Caramel Syrup: 50 grams Sugar 100 ml Hot Water
- 4 cups soy milk (960ml) I used cold store bought unsweetened soy milk
- 1 tbsp agar-agar powder (6.5g)
- ½ cup water (120ml)
- 2 tsp vanilla extract
Syrup
- ¾ cup water (180ml)
- ½ cup sugar (110g)
- 1 inch ginger (smashed)
GDL Tofufah

250gm soy beans
1.8L water
Few blades of pandan, shredded and tied into a knot
¾ tsp GDL (1/2 tsp + 1/4tsp)
½ Tbsp cornstarch
2 Tbsp water
2. Blend beans in a blender with 1.8L water (maybe done in 3 times)
3. Press out soy milk with a cheesecloth
4. Measure 2L of soy milk and bring a boil with pandan knot.
5. In another pot, mix GDL with cornstarch and water.
6. When milk has come to a boil, leave it to cool down, lid off for 5 minutes or until 90C.
7. Pour soy milk in a gushing motion(2-3 feet above) into pot with GDL mixture.
8. Do not move pot, wrap lid with a towel and leave tofufah to set for 1 hour.
9. With a tofufah spatula or a wok spatula, gently skim layers of tofufah onto serving bowl. Top with syrup of choice just before eating. Serve warm or chilled.
