Crazy Dough

Ingredients

  • 1/2 cup ( 4floz/120ml) milk
  • 1 teaspoon sugar
  • 2 teaspoons Active dry yeast - needs sponging*
  • 3 1/3 cup (16 1/2 oz/500g) all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon salt
  • 3/4 cup (6oz/180g) plain yogurt
  • 1 whole egg*

Instructions

  • In a small jug stir together the lukewarm milk, sugar, and yeast. Let stand for 15 minutes until yeast activates. It will become foamy and start expanding.
  • In a large bowl combine the flour, baking powder, and salt.
  • In a separate bowl combine the yogurt and the egg.
  • Once the yeast has activated add the yeast mixture and yogurt-egg mixture to the dry ingredients. Using a fork stir everything together until it forms a loose, sticky dough.
  • If the dough is too dry, add a little bit of milk or water. If it is too soft, add just a little bit of flour.
  • Once all the ingredients are combined gently knead/ fold the dough together until it forms a rough ball.
  • Cover the dough tightly with cling wrap and a tea towel and place in a warm spot to proof for 2 hours.
  • Once the dough has risen it should be about double in size. From here you can take this crazy all-purpose dough and make it into any of the following things!
  • Cheesy loaf, pizza, naan bread, savory stuffed roll, classic cinnamon rolls, pretzels, jalapeno & cheese stuffed dinner rolls, and braided Nutella loaf.

  • Ingredients

    • 2 1/2 cups (12 1/2oz/355g) all-purpose flour
    • 3 teaspoons baking powder
    • 1 teaspoon salt
    • 3/4 cup + 2 tablespoons (7oz/187g) water, roughly
    • 1 tablespoon olive oil
    • 5 minute pizza sauce
    • mozzarella cheese , grated
    • fresh oregano, or fresh herbs of your choice, for garnish
    • pepperoni

    Instructions

    • Preheat your oven to 400°F (200°C).
    • In a mixing bowl, combine the flour, baking powder, and salt. Whisk until thoroughly combined and set aside.
    • Combine the water and oil in a separate jug or cup.
    • Slowly add the water mixture to the flour mixture, holding back a little in case you don't need it all.
    • Using a wooden spoon, or your hands, mix until the dough should be soft, but not sticky. Add a splash more water if your dough is too dry.
    • Lightly flour your work area and a rolling pin then roll dough into a 12-inch circle using your hands (to make 2 smaller pizzas, divide the dough into 2 and roll into 2 8 inch pizzas).
    • Transfer the pizza base to a nonstick pizza base or large baking tray. Spoon the 5 Minute Pizza Sauce over the pizza base. Cover generously with a layer of cheese, pepperoni, and fresh oregano.  
    • Bake the pizza for 15 to 17 minutes, or until golden brown. Slice and enjoy!

    Hearty No-Yeast Bread

    • 1 cup  (3oz/85g) old fashioned rolled oats (you can also use quick cooking oats)
    • 1 cup (8oz/225g) plain yogurt
    • 1 cup (8floz/225ml) whole milk
    • 1/4 cup (2floz/57ml) flavorless oil (veg, canola, sunflower)
    • 1/4 cup (2 1/2oz/71g) honey
    • 1 large egg*
    • 1 1/3 cups (6 1/2oz/185g) whole wheat flour
    • 1 cup (5oz/142g) all-purpose flour
    • 2 1/4 teaspoons baking powder
    • 1/4 teaspoon baking soda
    • 1 1/4 teaspoons salt

    Instructions

    • Generously grease a 9x5 inch loaf pan with butter. Set aside.
    • In a medium bowl, mix together the oats, yogurt, milk, oil, honey, and egg until well blended. Set this mix aside for at least 45 minutes to allow the oats to hydrate.
    • In a separate large bowl, stir together the whole-wheat flour, all-purpose flour, baking powder, baking soda, and salt.
    • Gently stir the yogurt mixture into the flour mixture until JUST combined but not overmixed as minimal mixing results in a light bread. Note: If your mix is a little dry add 1/4 cup more milk. I have made this bread a lot and sometimes it needs a little more liquid.
    • Pour the batter into the pan, spreading evenly to the edges and sprinkle over a few more oats on top.
    • In an oven preheated to 375°F (190°C) bake the bread for roughly 50-55 minutes or until golden brown.
    • Remove from the oven and place the loaf on a wire rack to cool completely before cutting.
    • Store the bread at room temperature for 3 days or keep refrigerated for up to a week. This bread also freezes really well and makes AMAZING toast.
