Vegan Stuffed Tofu

 



Ingredients :-

Tofu pieces dug out

Carrots diced finely

Walnut diced finely

Salt

Nutritional Yeast

Method :-

1) Dug a hole on the tofu. 

2) Press all the tofu, carrots, walnuts together, seasoned with salt, Nutritional Yeast and other flavouring.

3) Steam them for 15 mins

[INGREDIENTS] (makes 17 yong tau foo)

Vegetable:

- 1/2 piece medium-sized bitter gourd, sliced 1/2 inch thick

- 1 piece medium-sized pearl eggplant, sliced 2 inches thick, slit open in the middle

- 2 piece large-sized red chili pepper, slit open lengthwise, deseeded

- 3 piece tofu puff, slit open in the middle

- water and salt to blanch vegetable


Stuffing:

- 2 piece traditional firm tofu, frozen and thawed for twice

- 1/4 cup preserved mustard green (榨菜), soaked and chopped finely

- 5-6 cap shiitake mushroom, diced

- 1 stalk spring onion (reserved 2-3 leaves for garnish), chopped finely

- cooking oil

- 2 tablespoon soy sauce

- 2 pinch salt

- 1 teaspoon white pepper

- 1/2 tablespoon corn starch

- 1/2 tablespoon glutinous rice flour

6 extra large button mushroom caps, or 12 medium, stems removed and chopped

1 medium shallot, sliced

1 large garlic clove, sliced

1/4 cup walnuts, chopped

1 tablespoon mint or other fresh herbs, chopped (parsley, basil, oregano, thyme, etc)

1/4 cup dried breadcrumbs with Italian seasoning and 2 tablespoons more for topping

2 tablespoons water

extra virgin olive oil

salt and pepper
