Tiny Meatballs Recipes with Pasta Sauce 


Ingredients

500 gm Minced Beef

500 gm Minced Chicken 

Grated Large Onion or Onion Powder

Grated Garlic or Garlic Powder

1 tsp Salt

1 tsp Pepper

1 Tbsp Paprika Powder

1 Tbsp Nutmeg Powder

1 Tbsp Cumin Powder

1 Tbsp Mixed Spices Powder

100 gm Dried Bread Crumbs as binder

2 Eggs as binder

2 Tbsp Cornflour as binder (if too wet)

5 Tbsp Milk or Water (more if too dry)

Note :- The bold spices are the main flavour.

The taste a bit middle-eastern with cumin powder, paprika powder and mixed species. This give a distinctive burst of flavour in the mouth when you bite each one. 

For Christmas 2024, I need to make one big batch to serve at least 3 main Christmas Meals, like 2 Large Pots Cooking and hopefully with extra to freeze or give-aways. I tried with 1 Kg Indian Minced Beef (RM28), 1 Kg Indian Minced Beef (RM20) for the fat and 1 Kg Minced Chicken (RM13), the meatballs should have a balance of soft meat from chicken and enough fat to make it softer in taste. Obviously, this is a level-up for my version of Bolognese recipe as I used to cooked them with minced meat pour into the sauce and let it cooked. 

 

LARGE PORTION (3 TIMES) - Christmas Cooking 2024

2 Kg Minced Beef 

1 Kg Minced Chicken 

Grated Large Onion or Onion Powder

Grated Garlic or Garlic Powder

3 tsp Salt

3 tsp Pepper

3 Tbsp Paprika Powder

3 Tbsp Nutmeg Powder

3 Tbsp Cumin Powder

3 Tbsp Mixed Spices Powder

300 gm Dried Bread Crumbs as binder

6 Eggs as binder

6 Tbsp Corn flour as binder (if too wet)

15 Tbsp Milk or Water (more if too dry)

Note :- The bold spices are the main flavour.

 



Make them really tiny bites.


Good thing with tiny bites, they cook faster and no need to turn each ball one by one, just shake the pan and let them roll around to get brown.

Most ingredients are just estimated to fill up one third of the pot. 

3 Tbsp Olive Oil (for the Italian flavour)

10 Onions diced (estimate)

10 Carrots diced (estimate)

5 Cloves Garlic minced

3 Thumb size of Ginger minced

1 Large Tomato Sauce (add another one for stronger taste)

1 Medium Tomato Sauce

1/3 - 1/1 bottle of Red Wine (the better quality taste much better)

1 Cup Vinegar (until you can taste the right sourness)

3 Tbsp ABC Soya Sauce (Dark Soy Sauce)

3 Tbsp Brown Sugar

1 Tbsp Salt

1 Tbsp Pepper

Optional to add in (for volume and taste) :-

1-3 Diced Green or red Peppers

1 tin of Buttons mushroom diced

1 tin of Red Kidney Beans
