 Curry Pumpkin




Ingredients :-

1/4 Pumpkin (medium size)

1 Potato (boil first as it takes longer to cook)

1/2 Cup Water

3 Cloves Garlinc minced

1/2 Onion dinced

1 Tbsp Mild Curry Powder / Kurma Powder / Masala Powder

1 tsp Salt

1 tsp Light Soy Sauce (Brag's)

1/2 Capsicum diced - add towards the end

To add last as garnish :-

1/2 Cup Cashew Nuts baked

1 Tbsp Nutrional Yeast

1 tps Olive Oil 


Method :-

1. Peel pumpkin skin, remove seeds and cut into bite-sizes. Boil Potato first. 

2. In a non-stick pan, bring to boil 1 Cup of water.

3. Add garlic, potato, pumpkin, onion and simmer for a while, and then add in the curry powder, salt, light soy sauce and cotinue to cook till soft.

4. Add in capsicum and stir-fry lightly, then remove from heat.

5. Add in the baked cashews, Nutritional Yeast and Oil lastly as garnish.
