Chewy Oatmeal Cookies

 

150 gm Salted Butter

80 gm Brown Sugar

2 Eggs

150 gm Rolled Oats

150 gm Flour

½ tsp Baking Powder

½ tsp Baking Soda

450 gm Dried Fruit Mixture (Apricots, Raisins, Cranberries, Angel Flakes, Sesame Seeds)

 

  1. Beat Butter in the bowl for 30 seconds
  2. Add Brown Sugar and beat until light and fluffy (pause to scrap down the sides)
  3. Add Eggs one at a time, beat until combined
  4. In a separate bowl, whisk together flour, baking soda and baking powder
  5. Add in the flour into the butter mixture and beat until completely combined
  6. Stir in oats, add in dried fruits mixture until well combined
  7. Preheat Oven to 150 C, prepare the baking tray with parchment paper
  8. Weigh the cookies  ??   gm and roll between palms to make a smooth ball. Press dough to about 1 cm thick. Diameter about 6-7 cm.
  9.  Bake at 150C for 8 mins (edges should be slightly brown, center may still be slightly underbaked but not raw, they will bake completely as they cool
  10. Allow cookies to cool completely on the cookie sheet before packing them into Ziplock bags.
