Healthy Carrot Apple Cake

Rolled oats — 1½ cups (180 g)

Carrots, finely grated — about 2½ cups (300 g)

Apple, grated — 1 medium (≈ 150 g)

Walnuts, chopped — ⅓ cup / 1 handful (45 g)

Raisins — 1 tbsp (15 g)

Eggs — 2 large

Greek yogurt or sour cream — 4½ tbsp (70 g)

Honey — 3–3½ tbsp (65–70 g)

Coconut oil or neutral oil, melted — 1½ tbsp (20 g)

Ground cinnamon — ¾ tbsp (5 g)

Salt — a pinch (1 g)

Baking soda — 1 tsp (5 g)

Lemon juice — 1½ tbsp (25 g)

Lemon zest — 1 tsp (2–3 g)


8-inch (20 cm) pan

Bake at 350°F (180°C) for 50–55 minutes
