Disney's Yam Soup Recipe
My friend Disney is a true foodie with an exceptional palate—he has a remarkable ability to recreate dishes simply from tasting them.
During our trip to Sandakan for the Drone Remote Pilot Course in 2025, we had a must-visit F&B list. One of the highlights was a famous shop known for its variety of soups. Among them, the Yam Soup stood out and became an extraordinary culinary experience for everyone in our group.
Inspired by that memorable dish, Disney set out the following week to recreate it. Relying purely on his taste memory, he carefully selected and assembled key ingredients. He was delighted to find that his version came very close to the original we enjoyed in Sandakan.
And now, here is his version of the recipe.
Soup Base Ingredients
2 chicken carcass for soup base
1.5 Kg yam - sliced and diced.
Garlic - chopped
Onion - chopped
Fish Sauce
1/2 Tbsp Black Pepper
3 Tbsp Cukup Rasa Seasoning
1 litre Water
Saute onions till brown, add in garlic, chopped yam.
Continue to sautee till fragrant.
Then add in chicken carcass.
Add in water. Bring soup to boil then lower the fire and continue to cook for another 45mins or more.
For noodle soup:
Mee hoon noodle
Meat or seafood - I used chicken breast sliced.
Fish maw - optional
Green leaf vege
Tomato slice
Fried onion
Fish sauce
Evaporated milk - just a little to add some smoothness to taste.
For the soup base can use dried shrimp, but I used just a bit of mui hiong salted fish slices just to get a little fishy smell
